

Vegan Brunch

Nothing hits the
spot after a night of clubbing than a leisurely brunch in the afternoon. Just because youre a vegan doesnt mean you cant indulge in some pancakes while nursing that hangover. Making the switch from ovo-lacto to vegan seems like a great challenge but when you know your ingredients, substition is not a problem!
Within this recipe, soy milk and flaxseeds replace the regular dairy and egg! This recipe makes a perfect plateful of small pancakes for two.
Vegan Apple Cinnamon Pancakes
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 tablespoon white sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3 teaspoons of flaxseeds
water
3/4 cup soy milk (regular or vanilla flavoured)
2 tablespoons canola oil
1 grated apple (I like granny smith or gala)
1 teaspoon cinnamon
Preheat a lightly oiled griddle over medium heat.
In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt.
Combine 1/3 cup of water and 3 teaspoons of brown flaxseeds. Bring to a boil on high heat and then simmer on low for 5-7 minutes until a slightly thickened gel begins to form. Strain the flaxseed out of the liquid and use the gel (just like egg white!) in whatever recipe needed. This recipe makes enough substitute for one egg. Increase as needed or leave some of the flaxseed in the gel. This may lend a slightly nutty flavour.
In a small bowl, beat together flaxseed gel, soy milk, and canola oil. Whisk into the flour mixture. Stir in grated apple and cinnamon.
Pour batter onto a large frying pan. I usually cook two small pancakes at a time. Cook 1 to 2 minutes, until bubbly. Flip, and continue cooking until lightly browned.
For chocolatey, chocolate chip pancakes, substitute a handful of chocolate chips (available at your local Whole Foods or Vegan Essentials) for the apple and a teaspoon of cocoa for the cinnamon. For banana pancakes, substitute the apple and cinnamon for 2 ripe, mashed bananas.
Enjoy with maple syrup, freshly squeezed orange or grapefruit juice and hazelnut coffee!
